The Laboratori del Gusto (Taste Workshops) of the Festa della Pitina 2026 are hands-on sessions of about three hours in a small group, twelve people at most, where you work alongside the producer: you watch, you try, you taste. This year’s theme is smoking.
Lena Flaten runs the kitchen of the Flammans Skafferi restaurant in Jämtland, Sweden: a stone oven and a cuisine “of relationships” with those who farm, hunt, fish and forage in the area, which in 2019 won her Slow Food’s “Food is Culture” award.
Bella Porcile, from Stockholm, is a bar consultant and drinks specialist, author of the award-winning book “Vilda Drinkar”: she works with herbs, berries, needles and flowers gathered in the wild.
Together they show Nordic techniques for smoking and flavouring: from the meats and dishes of the restaurant all the way to smoked cocktails.
Once you have booked, we will tell you in good time what to bring: suitable clothing and any kitchen tools. If places are sold out you can join the waiting list: when one frees up we write to people in order of sign-up.
Who they are
Flammans Skafferi — Jämtland, Svezia
A small mountain restaurant, twenty-four seats around a stone oven. Lena Flaten calls it “relationsmat”, food of relationships: the dishes come from working with those who farm, hunt and fish in the area, and from what is gathered in the woods, mushrooms and berries.
Mixed By Bella — Stoccolma
Bella Porcile’s studio: bar consultancy, drinks and concept development, workshops for companies, schools and private groups. Her work starts from foraging, herbs, flowers, berries and needles gathered in woods, meadows and along the coast, for drinks with “a taste of place”. She is the author of “Vilda Drinkar”, an award-winning book of wild drinks published in Sweden.
