The Laboratori del Gusto (Taste Workshops) of the Festa della Pitina 2026 are hands-on sessions of about three hours in a small group, twelve people at most, where you work alongside the producer: you watch, you try, you taste. This year’s theme is smoking.
The workshop takes place at the Borgo Titol farm, in the hamlet of Titol, Tramonti di Sopra: the village where pitina was born. Roberto and Francesco teach the techniques and traditions of pitina PGI.
From sheep, goat or game meat to the mixture, from shaping to the maize flour that coats it, all the way to smoking: the whole process, hands in the dough.
Once you have booked, we will tell you in good time what to bring: suitable clothing and any kitchen tools. If places are sold out you can join the waiting list: when one frees up we write to people in order of sign-up.
Who they are
Borgo Titol — Tramonti di Sopra
A family farm in the heart of the Friulian Dolomites Park: a small, modern curing plant where pitina PGI and other cured meats are made, and an agriturismo in an old house, with a restaurant serving traditional food and a few rooms. Their pitina is made from lamb, rolled in polenta flour, naturally smoked and then cured; the products can also be bought in the farm shop.
